Why is Mary Margaret’s hair shorter than Snow White’s?
Because Ginnifer Goodwin had a short, pixie haircut, they kept it. To distinguish her in the fairytale world she wears a long wig.

Fairy Dust can be good or bad. Snow White had it to use as a weapon against the evil queen.
