Occasionally I catch the Rachael Ray Show (where I instantly remember how utterly charming Rachael Ray is) and usually when I do, there’s a recipe I become obsessed with. This time, it’s the Double Stuffed Butternut Squash. Mmm.

Similar to a double stuffed baked potato (but healthier? maybe?) this dish is super easy to make.

Eating just one half of this is like a meal, and would pair well with a side salad or (in the winter) a soup.

Ingredients include ricotta cheese, bacon, scallions, thyme and sage. Stop and imagine that all together in your mouse. …Mmm. See? Something about this seems perfect for summer, even though whenever I think of a butternut squash I think of Autumn. And, stay with me here, since Autumn is my favorite season, this recipe kind of merges what I love about Autumn into a summertime dish.  Which is perfect, not to mention – delicious.
